Peanut Butter-Mint Chocolate Swirl Squares (Vegan!)


So... this recipe is actually a mistake. I had intended to make something akin to peanut butter cups in square form. However, during my recipe process, my dog Denali (pictures below) decided to headbutt me, causing the chocolate chips to fall into the peanut butter and mix.

Because of Denali's nudge, the recipe is now more awesome than I could have imagined! With the bottom layer having the bite of mint, the top layer contrast between the hard chocolate and the surprisingly smooth (it doesn't harden in the freezer) and sweet peanut butter, and the beautiful marble pattern--ah, I am just so happy with this! This is also SUPER easy and super delicious to make, for anyone, so you should definitely give it a try!!

Ingredients:
***Use these measurements to make a dish with ~30 servings***
  • 1 bag of vegan chocolate/carob chips (I used dairy-free chocolate)
  • 1 tablespoon mint extract
  • 1 cup of (natural) peanut butter (or sunbutter/almond butter/etc.)
  • 4 graham crackers
  • 2 tablespoons of confectioners' sugar
Method:
  1. Pour half the bag of chocolate/carob chips into a microwaveable flat glass container evenly, so all parts of the container are covered.
  2. Put chips in the microwave for 1 minute. 
  3. Chips will be soft; take spoon and press/stir them to cover more surface area.
  4. Add mint extract to chocolate and stir well.
  5. Put chips back in microwave for other minute until chocolate is melted and fills up bottom half of container.
  6. Put chips in the freezer for 2-3 hours.
  7. Crush graham crackers to fine crumbs, or use a food processor.
  8. Mix peanut butter, confectioners’ sugar, and graham crackers thoroughly. If you are using natural peanut butter, the measurements given should be correct; if you are using ‘regular’ peanut butter, you may want to add more graham cracker crumbs.
  9. Take frozen chocolate out of the freezer and spread peanut butter mixture over it.
  10. Add remaining chocolate chips from the bag to the top of the peanut butter and melt in microwave for 3 minutes.
  11. Take spoon and swirl melted chocolate with peanut butter.
  12. Return dish to freezer and freeze for 3 more hours minimum. 
  13. Before serving, allow to thaw for 1 hour at room temperature, cut into squares, and enjoy!
